I have included my spouse and children who were below 22 years old with my pr application and now i got my PR , therefore I am planning to sponsor my children and spouse, since my children have been included as non accompanying dependents under me , but one of my children turned 22 years old is it gonna be a problem

No, this doesn't lock them in. Age is locked in when you submit the application to sponsor them. The child that is 22 now cannot be sponsored. Your spouse and children under 22 can.

It doesn't mean anything once they are 22 years old.
The 22 year old now needs to qualify for PR on their own through an economic immigration stream like Express Entry, PNP, etc. The one exception would be if that 22 year old has a serious disability that makes them entirely dependent on you (i.e. they are unable to live on their own, unable to attend school, unable to work).

Unfortunately you made a very big error in not submitting the sponsorship application before that child turned 22.
This child can no longer be sponsored. They are too old now.
As said earlier, this child will need to qualify for PR on their own. If you have the funds, you can consider brining this child to Canada on a study permit, as an international student. This will allow them to come to Canada temporarily while they study. They will still need to qualify for PR on their own.
