I submitted my study permit application on May 24 (from India) and got my biometrics collection letter on the 25th of May. Due to lockdown in India, I was only able to submit my biometrics on the 25th of June.
It has already been almost two months and I still haven't received any Medical instruction letter.
On the website it said they were processing applications from May 23-29 last week, but i received no update or information whatsoever. (This week they are processing applications from May 30 onwards.)
This is the case with two other friends of mine who also applied around the same time.
Meanwhile someone i know also applied at the same time through the same method and already got her passport collected for stamping.
What could the reason be? is there anything i should be doing?

No, unfortunately due to the situation in India at the time, upfront medicals were temporarily halted by then.
Can you try now (ASAP)? And raise a webform to update your application with the info sheet that the panel physician would give you.

This is so stupid!! If Delhi VO is unable to process files without medical then why misguide applicants for NON-SDS by saying that they will send you a medical request later on??

Oh man, same here as you. Applied on 28th May. Biometrics is done, still waiting on IME. Lots of people did medicals later and got visas, we followed IRCC's recommendation to wait for IME and are now stuck.
