We are currently looking into options on how and when to enter Canada now that we have went through a sponsorship process and have a COPR.
Is one required to stay in Canada for 133 days (current "new PR card" processing time) following initial entry in Canada and until the new PR card is issued?
We also considered the PRTD but we do not seem to be eligible since we only have a COPR at this point and eligibility requirements state that you need to be a permanent resident.
Are there any other options which would allow us to enter Canada and temporarily leave the country before our new PR card is issued?
If you have a signed COPR. That means you are already a PR
After landing in Canada you can leave immediately.
To return you will need your PR Card or a PRTD.

Since I will not yet have my PR card, I will not be able to use this upon re-entry to Canada. The only option would be a PRTD, and given that I would not have satisfied residency obligations yet as I understand it, the application can be refused and my PR status might be questioned. Am I missing something?

Getting the PRTD might be smoother than you expect, you shouldn't worry too much about not meeting the residency obligation since you are still a "new" PR.
