I am planning to get married after I get my visa (Outland FSW) and before I land, would this affect my landing in anyway? I'm asking since all my scores in express entry were calculated based on my being single status.
And how could my wife join me? I'm assuming I'll have to initiate a sponsorship process after I land but is there any quicker route?

Yes, if you get married after you get your visa and before you land, you cannot land without having your visa re-opened and your spouse added. Even if she is not accompanying you in the application.
If you land, after having been married, and without having her added to your COPR, you will be barred from ever sponsoring her.

You application will be reopened, but your score will not change. Your spouse will have to undergo medical and produce PCC at a minimum. This process will take some more months and you should not complete landing until both of you receive modified COPRs.
