I am currently exploring the LMIA process to hire a foreign worker... Is there any specific job function that qualifies under this category? and what's the most common set of skilled workers that make use of this process?

Any job can technically qualify. You want to make sure you have past work experience and / or education that's directly related to the job being offered.

There is a whole process to apply for an LMIA. You will need to advertise the job in Canada and show that there are no candidate for the job who already have permission to work in Canada. You should be hiring the skillset that is needed in your business not who would qualify for a WP.
