in online application it says optional for letter of explanation? i believe all the documents u mentioned r the same study plan in some countries is mandatory ....statement of purpose is normally written for universities but u can use the same title and write why u deserve this visa etc. so as it say letter of explanation should mention what r ur plans why u r the right candidate for the visa etc....

I notarized only sponsor letter from maternal aunt
All the others documents are original from banks etc.

Yes, I think I will use as title Letter of Explanation and I will write my study plan etc.

Since you are from Greece, you shouldn't be worry about these procedure a lot. However, the title "letter of statement" is mostly for Universities. It is better you use title of study plan because you are applying for a study permit.
