So my family has applied for permanent residence about a year ago under my dad's name, but during the processing time our police certificates will expire, so CIC requested new ones understandably. The problem is that they requested certificates from 3 different countries within 1 1/2 months (by April 3rd) which is virtually impossible to do. During the time that has already passed, I turned 18 and 19, and I can't go to university unless I get my PR by April. So my question is: can I, as someone of full age, sort of "leave" our family application so that immigration will process my own application faster? I myself only need a police certificate from Canada whereas my parents need them from Poland, Germany and Canada.

You are applying as a dependent of your father. If you request to be removed from his application based on the premise that you are now of age, you will have no application at all. You will have to raise a brand new application of your own IF you are eligible. CIC may or may not permit you to be removed from your father's application.
No - not possible. You are a dependent of your father's application. You will receive the PR visa at the same time as the rest of your family. No exceptions.
If you are 19 and you want off your fathers application, you might be able to get your wish. However, as others have said, that means you have no application at all. You do not qualify to apply for PR yourself on your own because you do not at this point have the education, skills and work experience. So getting removed from your fathers application would just mean that your family gets PR and you don't.
It would be a wise decision for you to stay on your fathers application and get your PR, even if that means starting university a year later.
