I am just wondering if anyone in the forum has any idea what is the (approximately)
last date that you can receive an approval for a study permit to begin your studies in January.
I ask this because University starts the 7th of January, and my girlfriend and I
have to start considering our options in case she doesn't receive her student's visa in time.
In a similar manner, is it possible to receive a study permit after University starts
(e.g. University starts on 7th of January and you receive your student visa the 11th )
or is that impossible and/or would cause problems at the border?

You have to get extension from university, if not defer your classes to next intake if you get visa after your classes start. Show the deferal letter or extension at border.
