Can you advise, how "fresh" should be the bank statement for the officers to be satisfied?

I've honestly never heard of anyone being asked for POF. Although yes technically they can ask...
Just recent bank statements. No rule, just don't bring them from the previous year.

Current and/or previous one works fine.
just get one a couple of weeks before you leave. it's not a difficult paper to get
