I have just landed in Canada and went to apply for Ontario health card but they requested a proof of residency document (bank statement, home insurance , etc ..) which I don't have. I am not going to stay in Canada now, just landed before visa expiry and returning home for now. Any advise ?

If you're not planning on staying in Canada for now - there's no point applying for OHIP.
Once you return to Canada to live here - you should apply then. You will be issued an OHIP number and will be able to start benefiting from the program three months after you return to Canada.

Thx, what about opening a bank account ?. I did my SIN and of course the PR card, what else should I do now before leaving ?

Yes - opening a bank account (as long as it's a no fee account) would be a good idea.
