I came as a tourist in Canada to check things out about the society and other things. I liked it and now I want to find companies for a job-offer.
I am from Europe and do not need a visa, I just came from my country to Canada by just buying an airplane ticket and by having my passport.
But can I apply for a work permit if I ever find someone by offering a job to me from within Canada ? Or do I have to go entirely back again ?

You can obtain a work permit here (at the border) - you don't have to return home.
Before you can obtain a work permit you'll first have to find an employer and that employer will have to obtain an approved LMO:

Once you have a job offer and an approved LMO you can obtain the work permit.
I think it's pretty hard to do, the system is not really in favour of what you are planning and will be hard to achieve. I would like to hear from anyone that has managed to get a foot into Canada via this route as I don't think it's very common.

You're absolutely right. It's quite difficult to do.
Many/most Canadian employers aren't willing to consider non-Canadians for open positions because the LMO process takes so much time/paperwork (with no guarantee of approval).
