A little bit about my situation: IEC Feb 2017-Feb 2018 / now on visitor extension until end of July 2018.
I'm getting married to a Canadian citizen this weekend and we will apply for spousal sponsorship next week.
I'm just wondering which application would be best for us .. applying inland or outland? Are the chances high that they approve the visitor extensions until the sponsorship gets approved? It's only 6 months at a time(?) so it would probably be at least 2 more extensions.. not sure how friendly they are with that.
or is it best to go back to Germany and apply from there? (which I don't really want...)
If you are already in Canada, you may as well apply inland. That way you can be working again in 4 months.
Keep in mind, depending which province you are located in, it can take some time to receive your marriage certificate in the mail so you may not be able to apply next week

Also you can apply outland and still be in Canada as a visitor, but yeah you can stay up to 6 months at a time and apply for extension. As of now it seems like inland and outland applications are aimed to be finished by 12 months. In case of inland, however, you cannot appeal in case of refusal and also you can't leave Canada for whatever reason during inland process (you can leave the country but no garantee you will be able to come back).

Just to add to the comment about leaving the country at any time during an inland application in doing so immigration consider an application has been abandoned so would have to start again.
