I moved to Canada on a PR in Feb 2018 and intend on having my parents and younger sister over for a vacation in the spring of 2019.
I am beginning to start their visa application and had a couple of questions regarding the same
1) Can I have a combined application for the three of them? Or do I need to have separate applications for each one of them? My sister is above 18 years old and working
2) In one of the forms, there is a field that asks about the amount of money they intend to carry when they will be coming over. What would a safe amount to mention so that the visa isn't rejected because of financial reasons?
3) I am currently working on a contractual position . So pay stubs that are in the form of invoices will be fine to show as proof of my income along with my contract letter?

For online apps: She cannot be included in the same application as your parents. She must apply separately. Your parents can apply together in the same application.

Whatever money they individually earn from all possible sources of income. Their income must match their tax assessments. Nothing borrowed.
Zero financial dependence on you. You can support their visit by providing accommodation.

Your income and finances are secondary to their applications. They must prove they can individually afford the visit + airfare without depending on you.

Yes, there is an issue in applying too early. In this case, it would be almost a year in advance. Individual circumstances, finances and purpose of visit can change in days/weeks.
The visa officer would like to see the personal and professional situation at the time of the intended travel. In this case, your parents and sister are visiting for a general family visit and not for a specific event

In that case, cant I put the date of intended travel, say two- three months from now?
I get your point regarding visa officer needing to see the personal situation during the time of travel, but in that case, while applying for the visa, we need to have had the tickets booked to show that they are traveling on these days for visitng me. I am not too sure, if thats something that people do often.
