my wife is in china and i am currently in Canada filling form out with by wife online

what office immigration office would i put the china office or Canadian office?

i will be heading back to china next week

You will put either the Beijing or Hong Kong office.

Only Beijing and HK process PR applications for China. So you must choose between those 2 only.
