No, you have to declare only your dependants (coming or not). If your son is too old to be a dependant, then you will have to declare him on the "additional family" form.
I have 4 kids, 22, 20, 12,10. None of them are coming with me. I declared the 2 dependants on IMMM8 and the older ones are mentioned on the additional family form.
