I originally came to Canada on a work visa, that expired in may last year (2019) Mine and my partners baby arrived the day after it expired. He's Canadian i'm British. I stayed without status as I didn't want to start our family from seperate countries and it has taken us till now to send our application for spousal sponsorship off. My family in the UK are desperate to meet the baby, but I'm nervous that if I return to the UK they won't let me back in canada. Will a simple visitor visa suffice untill we hear about my PR application or will they refuse me entry at the border because I stayed without status last time I came to Canada?
Personally, I wouldn’t risk leaving Canada until your application is done. It’s extremely risky. With an overstay of almost a year, it’s quite probable they will refuse you entry, visa or not. And assuming you applied inland, if your entry is refused your application for PR will be refused with it. If your family is that desperate, have them fly to Canada.
Don’t understand why you didn’t apply to extend your stay as a visitor when you had the chance.

Not sure what you mean about a visitor visa. You can't get one. It's a huge risk to leave and there is definitely the possibility of being refused entry. Have your family visit here.
