If an application is cancelled, then what?

I am anticipating my application being cancelled because of a PCC issue (dates).

In that case, what happens? Can I use the same profile? Is there a way to link the documents and information to a new profile? Do I have to pay again?

You would have to reapply (create a new EE profile) and expect another ITA! In the meantime IRCC will refund to you the fees within 4-5 weeks!
I would suggest you to raise a CSE, ASAP, with the correct PCC's thus to avoid your application to be cancelled!

It's too much of an effort to get a correct PCC. If it gets cancelled, so be it, atleast I'll get some money back

Lol, It even more effort to emigrate, finding job and settle in the new country. You shouldn't even think about immigration in the first place.
