I'm planning to get a Young professional Visa through IEC. What happens with my "admittance" to Canada if I get fired / if I resign? Would I have to leave the country, or can I stay for the duration of the visa, or would it change into some sort of `visitor` visa (so I would be able to stay & travel in + out of the country)? I do understand I am not allowed to find a different job, but I'm mostly concerned about being in the country in the case of me getting unemployed.

You can stay for as long as your work permit is valid. You don't need to change your status but as you've said yourself, you can't work for anyone else.
