Yes there are other work permits other than IEC but you would need an employer to apply for an LMIA to obtain you a work permit. Which is difficult but if you have a skill it's doable.
For UK citizens you don't need a job offer, though I'm sure this could change in the future. The work permit is in high demand and the quota goes pretty quick.
You have 1 year from receiving your IEC to obtain a work permit and the one year of using your work permit. If you have the cash then you could just stay in Canada for a year without working.
