1. It depends on how long you have been outside Canada and the reasons. How long you remained in Canada after getting your PR, what establishment that you made in Canada. Relatives in Canada. You may want to read the decisions from the IAD to give you some idea. http://www.canlii.org/en/ca/irb/index.html put residency in the text box and then search.
You do not need to submit all documents with appeal application. First of all you have to submit your IAD appeal application as it has very few days to submit which is about 30 days ( right) then IAD office will contact you and give you the number of your case during or after receiving that case number you can send them all documents which you think will help you to win your appeal. Also you can have a lawyer if you wish to but if you can not afford a lawyer then you have to face the appeal yourself.
