I'm flying in through Edmonton from the States and I would like to know if anyone has any idea on how long it will take them to issue me my work permit. I already have an approval letter from the Canadian Consulate here in the US stating that I've been approved to work, so I just need them to give me the actual visa when I get to the airport. Any idea how long that may take?

Mostly depends on how long the line ups are. If you have all of your documentation, i.e. letter from the Consulate, copy of your LMO, copy of your contract, then it normally only takes a few minutes (maybe 15) for everything to be processed by CBSA. And you will be getting a "permit" not a visa as you are visa exempt (being a US citizen).
