I am in the process for the Permanent residence, sponsored. I want to go visit my family in Mexico and I would like to spend the most amount of time possible with them, but I recently knew that there is a law where they state that the time outside of Canada while doing inland application is very limited. Does anybody know how limited? Can I spend 2 months away? one?

Your visit should be limited in time. Most will agree that 2 or 3 weeks is about the maximum to not be denied for being outside of Canada. Remember, if you lave and go back to Mexico and are not allowed to return to Canada (for any reason) then your inland application will be considered abandoned and you will have to reapply via the outland route and remain in Mexico.
It is highly advised that those wishing to be able to move between the borders without worry about being readmitted apply outland for this very reason. Choose carefully and wisely if you still decide to go through with your plans.
