I successfully sponsored my spouse who landed 3 months ago. My spousal application was sent Aug 2019. However, I have not received he original documents that I submitted to IRCC back (e.g. marriage certificate). How can I get these back from IRCC?

You shouldn’t expect to get them back. That’s not the norm. You could try contacting them over webform and see if they can give them back.
I'm pretty sure it says somewhere on the forms/checklist that documents are not returned
You can always order another copy from the Service Centre of your province
I don't think you will get them back, you may have to order new ones.
