Hello. I became a permanent resident last year through family sponsorship (my husband sponsored me.) I happened to be 8 months pregnant when I landed as a permanent resident. I gave birth in September to our first child.
(I gave birth in the USA because I wouldn’t have gotten OHIP in time for my due date.)
So, now my son and I are US citizens and my husband needs to sponsor our infant son.
We are going to be in Canada during the sponsorship, but both my son and I won’t have OHIP for a while.
Any RECOMMENDATIONS on health COVERAGE/INSURANCE my son and I can use in Canada UNTIL we get OHIP?
If your husband is a Canadian citizen then presumably your (his) child would be a Canadian citizen by descent, so doesn't need to be sponsored. You would only need a citizenship certificate for the baby.

I'm not sure if I understand your situation, but I'll try:
If you are a PR already (as opposed to a Visitor), there's now no 3-month waiting period for OHIP because of COVID-19. So if you are living in Canada during the sponsorship process, you (not sure about your son) should be able to apply right away. https://news.ontario.ca/mohltc/en/2020/03/ontario-expands-coverage-for-care.html
If I am not understanding you correctly, and you still need some kind of insurance because you can't get OHIP yet, check out Destination Canada's Visitor's insurance. I have been signed up with them as I wait out the PR process and receive my AIP letter and can apply for OHIP. Fortunately I haven't had to file a claim with them, but signing up was very easy. https://www.desttravel.com/?id=1684...E#/insuranceproducts/visitortocanadainsurance
