There is a rule that I should complete one year of H1b in the US. Which I have done. But the visa issue date is April 2008. I started working on H1B from october 2007 and in April I went for stamping. But looking at my visa they will think that I am on H1B since April 2008. Will this be a problem?
Shall I send a copy of my H1B petition approval receipt and pay stubs for October 2007 or something like that.

I think you should be good. Submit your first and last paystub alongwith I-797 as well as Tax returns (1040). These documents shoud act as evidence that you have worked since Oct '07.
