But I was also told about the Canada Experience Class. Wouldn't I qualify for the Canada Experience after working there for a year?

You would likely qualify. Lots of people qualify. But qualifying is very different than actually being selected. The CEC program works on the basis of a points-system with those with the highest points being selected out of the applicant pool. Without at least a Bachelor degree (Master's is preferable), you won't score enough to be selected.
