I received my PP on 26th April 2018 and am due to get married on 22nd August 2018 and court married on 7th Aug 2018.
Would it be better to do my landing before my wedding and start a sponsorship process for my spouse later or would it be better to do my landing after the wedding and declare my marriage to get my spouse in the application?

That depends on how long you are prepared to be apart from each other.
You will almost certainly be separate for up to a year if you land and then marry.
If you marry before landing, you will be able to be together but your landing may be significantly delayed, 6 months maybe. Also, if your spouse is found to be inadmissible, you would be as well.
