Me and my wife both are PR and have completed 11 months already
our daughter was born this year and is a Canadian citizen
now we have returned to India as it’s tough for us taking care of child while not being financially settled
my question is that is there any way we can fulfil the requirement for minimum days for PR while staying in India as we will not be able to stay in Canada presently or in near future
Unfortunately not as you need to be in Canada for 2 years in the 5 years from initial landing. After the first 5 years it becomes a rolling 5 years where you need to have 2 years at each new entry to Canada.
PR cards expire but PR status never expires and can only be renounced or revoked. The latter could happen if you enter Canada without having met the residency obligation but in mean time you are still PRs.
PR cards by the way cannot be renewed from outside of Canada so once expired you would need PRTDs to return which in applying could result in PR status being revoked due to failing the residency.
having a Canadian born child makes no difference to the residency obligation although should you lose or renounce your PR status the child when they reach 18 could in theory sponsor you for PR depending on immigration rules at the time

Just a note that if you are receiving CCB, you should ask CRA to stop it because you are not eligible for it as you do not live in Canada. The penalties are huge if you continue to receive it. And yes, they will find out that you do not live in Canada.
