My wife is sponsoring me. She is a stay-at-home mom and I work to support the family. I know that there is no income requirement for sponsorship, but I have a few questions on filling out Form 5481. Should I include our Canadian citizen children on line 6B? They are technically not dependent on her financially since I make the money. Also, is there any information I need to provide regarding my income? Should I include my Option C as well as hers? We are financially stable (no social assistance, etc.),

Form 5481: Yes, absolutely she includes the child(ren) in Box 6B, and lists them in Section 6B on the following page. It doesn't matter that she is not working to support them, it matters that she is responsible for providing for them and that they are dependent on her. And you include them, also, in Section B of the "Additional Family Information" form.
You can include your Option C (as well as hers, if she has one) - as you know, there is no minimum income requirement for spousal sponsorships, but CIC does want to be sure that financial support is available. You should probably include an explanation of the income situation with Form 5481 to explain why she has no income to declare in Q#3. You can give them your information (income over the past 12 months, employer, etc) instead on the separate sheet, and include your Option C and (most importantly) your Immigration Canada work authorization.
