My question is that I am about to apply for Express Entry. I am currently unmarried but we will be married by next three months. So can I apply with marital status married before actually making it official?
Does the date of Express Entry application and the date of marriage should match or happen before the application process?

Don't do that as you will have to give marriage certificate later (after ITA) and the dates will be different than when u mentioned it in application. you can anyways make change to your application later. read the threads for more details.
upto you... currently CRS is at an all time low, no one knows how long this will last...
personally i would go ahead and submit the application as a single applicant, if i get ITA, i would accept it and send documents as a single applicant.
in the meanwhile i would urge the to-be spouse to take ielts, and get her education assessed... as soon as you both are married, send CIC the marriage details, proof of marriage, spouses wes and ielts report, updated PoF and ask them to add her/him to the application.
Not true. I am common law. Hetrosexual couple together for 6 years just not got married yet (very normal in Canada). You just have to prove you have lived together for at least a year.
You prove it with joint leases, joint property ownership, joint bank accounts, bills paid by both or either person for same address, mail sent to same address etc...
