So my PR Card is expired with renewal under process and I need to travel urgently to the states for a short visit (Having a USA visit visa)
Unfortunately, my COPR is lost and I can't seem to find it! I do have a scanned copy with me.
Would that be enough to enter Canada?

Yes, just take your expired PR card and your passport. I assume you are in compliance with the RO?

Go with your old PR card and proof that you have already filed your PR card renewal.
