Im from Mexico, and my girlfriend is Canadian. We’ve been living together in Mexico for the last 11 months, and she’s been staying here as a traveler (She’s worried she hasn’t declared that she’s living here to the Canadian government).
We want to move to Canada and work there, and I would like have a work visa to be able to do that.
This are the papers we could get for common-law proof:
-A statutory declaration of a common-law union.
-Letter from landlord attesting you were living together.
-Letters of support from parents.
-Personal letters (from each the applicant and sponsor).
-Proof of travel together.
-Photos of relationship.
-Evidence showing how you stayed in touch when doing long distance.

Physically separated but still in a relationship, and the longest continuos time we where apart was 3 weeks because of traveling.

You need to prove two things:
1. that you have lived together for 12 continuous months, and
2. that your relationship is genuine.
You probably have enough proof that your relationship is genuine.
I would start counting the 12 months of cohabitation from whenever it was that the 3 or 4 week break ended. Ideally you would have both names on the lease, but a letter or affidavit from the landlord could be acceptable. You should have both names on utility bills; if that is not possible, one person's name on one bill, and the other on another, with the same address, will work. Letters to both of you at the same address, or to each of you separately, will help. If it is not an official letter, you should keep the envelope as well to prove it was mailed the date you claimed. All this proof of cohabitation should cover the full 12 months.
Financial proof is good as well, such as joint bank accounts, joint credit cards, etc.
