When it comes to filling get out my employment on the sponsor questionnaire there were times were I was in between jobs. So would I put that I was unemployed in the gaps between jobs? There are 2 times were there is a week gap in between jobs. Or does it matter if there are gaps in between??

If I recall correctly, that form only asks for month and year, so you can still show that you were employed in that month/year, right?
Because people are [sometimes] overly concerned with possible misrepresentation, you can certainly add a note explaining the brief gap in your employment, if it makes you feel better.
But maybe you can help???? Do you think it would be okay to leave a week gap? Because there were 2 jobs I had and inbetween I was unemployed for 1 week inbetween those jobs. Do you think I should fill in the gap saying I was unemployed for that week? Or does it really matter?
I am a teacher, and technically every summer break, I was "unemployed." Same with when I taught in another country and one school ended in June and I didn't start teaching until July.
My spouse who was the sponsor and a professor has that, too. Our application was approved with no issue. We didn't write unemployed in the time between new schools, etc. I can't see why your week between jobs would be any cause for concern. I doubt they'll spend more than a few minutes max looking at that.
I think either way—adding or omitting it—you'll be fine. Do what you think will help you sleep at night. Lord knows peace of mind is worth having in this journey.
