I wa working in Canada for 15 months 2012-2013 on Intra company transfer. There I worked for Canadian client. I have letter of intra company transfer which states all the required info mentioned on Reference letter. I also have letter from client on client letter head which states my job description tenure and I will be working at there location. But these are two year old documents.
My doubt is
1) Do I need a new reference letter? If yes then from client or from my company in Canada ?
2) Is Noc code mandatory to mention on reference letter?
I have been in you situation , You should give the reference Letters dated new for sure . If you can get it from Canadian Company - Counterpart of Indian Company . If they don't provide you can still use the old ones but the Date mentioned on old should be "Post Dated" to the time you are going to be eligible for CEC .
That's my point of view , If you can get new than anyways you are good to go
The letters need to be dated and signed AFTER you completed the qualifying experience. They are intended to attest to the work that you have already done.
If it is at all possible, try to get new letters...

Do they CIC verify with Canadian company that when this letter was issued ? there is no reference number on that. Can I modify the date on the document As I have the template with me and my lead signed it.
Format would not make any impact , Letter should have your Title ,Salary , Benefits , Roles and Responsibilities with NOC code along with duration you served.
It should be on company letter head probably signed by HR or Manager with Company Address and contact details.
