I did my bachelors from 06/2006 to 06/2010, but I was only awarded a degree in Dec 2012. In my education history I have mentioned the date as 06/2006 to 12/2012.
But in my personal history I have mentioned 06/2006 to 06/2010 as study and 2011 onwards employement.
I have also included an LOE to explain that my course ran till 2010 but degree was awarded in 2012. Is this the correct way?

No this is not the correct way. It should be other way round. You should mention the correct dates in the education and personal history and write LOE for the same. This will not affect your MEC or CRS score.

You need to be truthful about everything. Do not mistepresent anything. It is common that people get awarded at later date. You should mention your actual study dates (2006-2010) in the education history and must not leave any gap in personal history.
