My soon to be wife works and lives in Seattle. She has a great job with tons of promotional opportunities. I did some research and found out that there are decent jobs related to my career path down in the U.S.
Generally is it easier/quicker for her to be granted permanent residency in Canada or for me to be granted permanent residency in the U.S once all requisite information is submitted?

Yeah I'd agree with the above statement. The Canadian process is quite lengthy (though a bit less lengthy for Canada-US relationship where you're applying as outland as compared to other foreign countries).
Don't just look at jobs though. Make sure you compare cost of living, benefits at the jobs, health care, etc. It may be worth the wait to have her come up here if that's where the balance sways. Though I like Seattle - Go Seahawks!
Although, the green card requires a greater commitment -- it's a lot easier to lose. Canadian PR gives you more flexibility as to where you live and for how long.

I got my green card in 5 months (applied at the end of 2013). Now I'm sponsoring my husband here but we've just applied, so I don't know how long that'll take. The process and application (i.e. information and documentation needed) are very similar.
The question is where would you like to live? I HATE the US and I knew that I'd be there for only a couple of years. I was even a little bit embarrassed when I was moving there. After living in the US for over 2 years, my opinion didn't change. In fact, I despise the US even more and I am SO relieved that I don't live there anymore. I moved back to Canada a few months ago and I don't even mind the cold anymore (used to complain about it every year before haha).

Another big difference between the GC and PR, is that a PR of Canada can live anywhere in the world, with their Canadian spouse/partner/sponsor, and have those days abroad still count towards the residency obligation to maintain the PR status (which is 730 days for each rolling 5 year period).
The GC does not offer the same generosity.
It really boils down to where the couple really wants to live.
true, but for someone living in Canada, its easy to cross the US border and comeback on a weekend every 5 months and 29 days to maintain the GC.
I think this can work for a couple of years without issues with US immigration.
