Different jobs in over 2 years ( imm0008_8e)

Hello,

I am planning to apply for CEC soon. I have experience over year in a full time job now. But before that, I was working as a waiter for almost 6 months and 11 months as a teacher's assistant. All the three jobs I worked at has different NOC codes. Should I add all the experiences in the Economic Classes - Canadian Experience Class - imm0008_8e form?
Also, if I have to add the experiences , do I need letter from the employers?
