We have completed our applicant and spousal sponsorship forms over the past month, and therefore have signed and dated each form on a different date.
Will this cause problems at immigration when they see each form was signed on a different date?

The main thing is making sure you have filled out the most up-to-date forms.
I don't think the dates on the forms matter too much.
Within one month is better than I did! My main goal was trying to keep them all dated in the same year.
