I have an ITA and already have more than one of year Canadian experience required for CEC. However, before getting into the pool I put my Foreign Experience in the form and got 38 points for it. Now for one of the positions it's extremely hard to provide the required evidence. Just to make everything simple and avoid extra hustles, should I just decline the ITA, submit a new profile and put my foreign experience in the Personal History Part only and not in the Work Experience section? I have to say that with zero foreign work experience, my score will be 490 which is good enough to get an ITA in the next draw.

I believe you can just delete those jobs from your profile. As long as your score remains above the threshold for your draw, your application will remain eligible.
But what you suggest above is fine, it would work too.
