Am I right in thinking that the majority of people include a cover letter with their application? What is it that people say in the cover letter?

(I'm being sponsored by my gf under the family class)

You can also attach a covering letter if you need to explain about you what you feel you could not express clearly in any forms.
As there is a checklist, the covering letter is not mandatory. The barcode sheet should be on the top of the package and not the covering letter and forms. Being you are sponsored as spouse, you can tell anything additional about your relationship, about your travels etc.

I wrote a letter about us. How we met, development of relationship etc. I also wrote about what we like to do together, our hobbies, our day to day life. Who does the cooking and the washing up. I even wrote about our dog! I just wanted to make us sound like a real and normal everyday couple. Its not mandatory, but I think its a nice touch.

maybe not cover letter; maybe outline to ur proofs or a table of contents of all the included proofs and supporting documents?

In that case, I definetely recommend splitting it into three categories, putting each document in the order that it's listed in the checklist, and having a table of contents for relationship proof. I did that myself. But you don't need a cover letter to the entire application. The IOs know which form to go to to find a piece of information, it's just a matter of making it easier for them to find that form.
