Spouse of applicant here (also representative). I am a Canadian citizen by birth but live overseas with my wife (not Canadian, yet).
As the sponsor and representative, do I NEED to give a mailing address or may I use email only to correspond?

You need to give a mailing address although they will use email for almost everything if you indicate that as preference.
As far as I'm aware the one thing they WILL use a mailing address for is returning your application if something is missing.
You can give a Canadian mailing address (relatives or friends) not just your overseas address; that's what I'd recommend because you would want to know early if returned and overseas may take much longer (they return by regular mail).
