Chef code 6321 is still ok for CEC
Don't be tempted to fabricate experience letters or other documentation for CEC. Apart from being a bad idea generally, I'm sure CIC will be on the lookout for cooks trying to pass themselves off as chefs to dodge the new rules.

If you are working under an LMO - then you can't just change your experience to a chef. If your LMO is for a cook - then that's the experience you have and you don't qualify to apply for CEC. If you want to gain experience as a chef and be able to qualify to apply for CEC, you'll need a new job, a new LMO and a new work permit under the chef NOC (and one full year of experience in this new job).
