3. Check and see where it's easier to get official documents to prove your marriage.
4. Yes. As long as the circumstances of the marriage entered into in Mexico wouldn't make you ineligible to get married in Canada (e.g. if either party was already in a marriage or if they are too closely related).

note: Your marriage certificate will be in spanish if you marry in Mexico, you will need to get a certified translation of this document. And in order to get married there if you birth certifate and other documentation is not in spanish it will need to be legally translated to spanish.
2. if your fiance can get a visa it would be easier to get the english Marriage certificate
