Going through the Documents Checklist, it says that I need to provide copies of the citizenship certificates or cards for any family members who are Canadian citizens.

I have 4 members of family who are Canadian citizens. My wife (my sponsor who lives with me here in the UK), her Mother and Father (my in-laws who live in Canada) and my Great-Aunt (sister of my Grandmother, who lives in Canada).

I can provide copies of Citizenship of my Wife and In-Laws, but my Great Aunt is hitting 90 years of age, has sever Alzeimers and can't remember her name, let alone where her Citizenship Certificate is!

Therefore, will it be ok to just supply the Citizenship certificates of my wife and in laws and leave my great-aunt out of the equation?
 
Family members refers to spouses and children, not in-laws or great-aunts.

Yes. Although I believe that since your wife is your sponsor, her checklist asks her to include some proof of citizenship or PR status anyway, so there's no need to double up on that. I included a copy of my passport and birth certificate in the application, so there was no need to include another copy with my wife's documents.

Spot on. I was going to double up on this for both sides of the application, but you've just saved me extra work. I won't bother including it in my application. We will just include her Citizenship Certificate in her application.
 
I just sent the bio page ( the picture page) of my husband's (sponsor's) passport and they never requested any further ID for citizenship.
