I am currently in Canada on PGWP status and working as an engineer in Nova Scotia, and my wife wants to sponsor me for my PR application. Since my wife has just left her job, will I be able to apply for the PR by proving I can financially support both of us through my employment letter, bank balance and pay stubs? I’m asking since one of the requirements for the sponsorship program is that the Sponsor must be able to financially support me (the principal applicant).

Basically yes. Your spouse will also be providing financial information from her past work (eg NOAs etc). She can indicate she intends to work and her past work/salary experience will be taken into account.
If she finds employment during the application processing, it would likely be helpful to provide info on new job to IRCC.
