I have applied for a common-law sponsorship for my partner within Canada (Québec). She has been living in Québec with me for the past year and a half (she has a working holiday visa).
I've recently been offered a contract to work in Amsterdam for 2-3 months and I would like to go there with her, it happened very fast and I need to leave by next week. However, we just sent in her application this week and have not yet received a response from CIC regarding it.
She still needs to do her medical check. Police certificate has already been acquired.
What steps would be involved if we did plan on going and what should we be looking into if there are any changes? Would we need to contact CIC and tell them?

If you applied INLAND, then a requirement of that app is for sponsor and applicant to live together in Canada for duration of processing. A 3 month trip outside Canada may cause IRCC to think you are no longer residing in Canada, and cancel the application.
If you applied OUTLAND, then it would be no problem assuming you're a Canadian citizen. Would only be a problem if you as sponsor were a PR.

We applied to this address, this would be considered applying OUTLAND? Is there something inside our application that indicates whether we are applying inland or outland?:
"Application for spouses, common-law partners or conjugal partners and dependent children (currently living outside Canada):
CPC Mississauga
P.O. Box 3000, Station A
Mississauga, ON
L5A 4N6
Note: Your spouse or common-law partner may be living in Canada with you, but if he or she doesn’t plan to stay in Canada while the application is being processed, choose this option."

Would it be better if I had included a letter indicating that we were both going to live in Amsterdam for the next 2-3 months or would that not have mattered?
