Currently I am already working in Canada holding PGWP. If I received an invitation from IRCC, can I change my job during the processing period, and do I need to notify IRCC? Will it affect the processing?

Yes you can change job.
You should also notify them as they call the past/present employer to verify.
 
you can change your job at any time , unless you are applying under LMIA or PNP using that job/company.
