The answer to the question is yes - you can apply for a working holiday visa while a spousal sponsorship application is in progress.
EDIT: OP - looks like you're from the UK. Note that there's always a great deal of competition for the UK spots and there are far more applicants than spots available. So selection is by no means guaranteed. But by all means submit your profile - you may very well get lucky - and there's certainly nothing to lose by trying.
