I am currently a student of diploma course at college, and I have a plan like below,
-------------------------------------------------------------------------------------------------------------
Apr/2017 – Complete 4th semester as Computer programming diploma and change course to System analyst diploma for 3 years with co-op session
May/2017-Aug/2017 – Taking just 1 mandatory class for 1 semester for co-op preparation
Sep/2017-Dec/2017 – Taking co-op session and graduate early as Computer programming if I am hired.

Q1) Can I apply for Post Graduate Work Permit normally after taking co-op session in Dec/2017 when I graduate early as Computer programming even though last semester for Computer programming is completed in May ?
Q2) Is it ok having a just 1 class for 1 semester to meet the requirement for maintaining study permit as a full-time student and applying Post Graduate Work Permit ?

1. Yes. Co-op is itself a credit based course (not just a job).
2. Look at your academic schedule. If its just one day class, you should be fine.
