(1) By the time the test comes my son will be over 18 - he was below 18 at the application time -, will he need to be attending the interview? (I know he won't need to write the test).
(2)What documents do I have bring for him during the interview? .
(3) What documents should I bring for my other son who is less than 18 during interview?
-Letter to appear for Test/Interview sent by CIC
-PR Card(s)
-All Passports in your possession since landed.
-COPR of everyone
-School enrollment letter etc for kids
-Health Cards of all
-Driver's License (for anyone who has it)

Thanks, but my son won't get a letter as he doesn't need to go to the test.
Do you mean my letter? -if yes-, I doubt anything in my letter will be mentioned about him for the same reason.
My daughter was under 18 when we applied on her behalf. She did not receive a letter for the test as she did not have to take the test or the interview, but has to be present for the oath, scheduled on Jan 29th. W3 revived a separate invitation letter for her for the oath.

As your son was below 18 at the time of application he will not be invited for the test and will not require an interview. As such he will not need to bring any documents because he will not be going through an interview. He will be required to complete the Oath.
Immigration base everything on the age at the time of application, and that carries through the entire process.
Some friends of ours had the same situation, their daughter was 17 at the time of application, she turned 18 during the processing and was not invited to the test or interview.
